Ingredients:
1 tsp. minced garlic
1/2 tsp. minced ginger root
1-1/2 tbsp. vegetable broth
1/2 cup diced carrot
1/2 cup peas
1/2 cup diced onion
4 cups cooked Jack Rabbit White Enriched Long Grain Rice, cooled
2 eggs
2 tbsp. sliced green onion
2 tbsp La Coy Reduced Sodium Soy Sauce
Direction:
Heat wok or large non-stick skillet over high heat. Spray with cooking
spray. Add garlic and ginger. Cook until lightly browned.
Add vegetable broth, carrot, peas and onion. Heat for one minute.
Add rice and cook for three minutes, tossing frequently. Push rice to the
sides of the wok to form a well in the middle of the pan. Spray well with
cooking spray; add egg. Cook, stirring occasionally until egg is set.
Combine with rice mixture.
Add soy sauce and green onion. Heat for one to two minutes longer, tossing
frequently.
