Ingredients:
1 tsp. olive oil 
1-1/2 cups chopped onion 
1-1/2 cups chopped green bell pepper 
1 cup chopped celery 
2 (16-oz.) cans pinto beans, un-drained 
2 (14-1/2-oz.) cans Diced Tomatoes
1 (6-oz.) can Hunt's Tomato Paste 
1 cup water 
1 cup chopped fresh mushrooms 
1 jalapeno pepper, seeded and chopped 
1 tbsp. chili powder 
1-1/2 tsp. ground cumin 
1 tsp. dried oregano, crushed 
1/2 tsp. pepper 
1 (20-oz.) pkg. tofu, drained, cut into small cubes 

Direction:

Coat a Dutch oven with cooking spray; add oil and place over medium heat until hot. Add onion, green pepper and celery; sauté for five minutes, or until onion is tender.
Add beans and remaining ingredients, except tofu. Bring to a boil. Cover; reduce heat and simmer 30 minutes. Add tofu; stir gently. Cover and simmer 10 additional minutes.
