Ingredients:
2 cups cooked rice
1 (15 oz.) can black beans, rinsed and drained
1 (14.5oz.) can Hunt's® Diced Tomatoes with Roasted Garlic, drained
1/2 cup shredded cheddar cheese
1/4 cup fully prepared Italian salad dressing
2 tablespoons chopped fresh parsley
shredded lettuce
juice of one fresh lime (optional)
Direction:
Combine and mix all ingredients, except lettuce.
Serve over shredded lettuce; sprinkle with lime juice, if desired. To
serve warm, combine all ingredients omitting lettuce. Place in a 8x8x2 -
inch baking dish. Bake, covered, at 350°F for 25 minutes or until warmed
through.
