Ingredients:
1 stick margarine
3/4 cup Sucanat or other sugar
Egg replaced equal to 1 egg
1 1/2 tsp. vanilla
1/2 tsp. salt
1 cup whole wheat flour
3/4 tsp. baking powder
1 1/2 cups rolled oats
3/4 cup chocolate chips
3/4 cup chopped walnuts
1/4 cup rice or soy milk
Direction:
Preheat oven to 375. In a bowl, mix the margarine,
sugar, egg replaced, vanilla, salt, flour, baking
powder, and rolled oats. When well mixed, add the milk,
chips and walnuts and mix again. Add just enough milk to
make the dough stick.
On a well-greased cookie sheet, place small patties of
cookie dough. Mold them and press them down slightly.
They do not spread well, so don't make them overly
thick. Cook the first batch for 12 minutes, and the
second one for 10.
