Ingredients:

200 gms maida flour
4 tbsp. butter or ghee
salt to taste
2 cup methi leaves cleaned & finely chopped
1 tsp. red chili powder
1/2 tsp. chat masala
salt to taste
2 tbsp. wheat flour
oil to shallow fry

Direction 

Mix all ingredients except water. Add a little water at a time and form a soft dough. Keep for 30 minutes before using. Always keep covered with a moist cloth, and after that covered with a plate so that the cloth is kept moist. 
The methi  must be dried well. Mix all dry ingredients together. Roll a lump of dough as for paratha. Spread some spinach over it. Sprinkle some dry mixture all over. Make a tight swiss roll. Now twist into a coil. For rolling, use dry flour to roll easier. Dust the roll with dry flour now and then. Press together and again roll to full size. 
Heat the flat pan or chatu and roast the paratha both sides and the shallow fry that roasted paratha . Serve hot.
