Ingredients: 

3 cups Plain Rice cooked with a tbspn butter;
Lime Juice from 3 Limes; 
Finely sliced Green Chillies 1 1/2 tspns;
Fresh grated Ginger 1 1/2 tsps; 
Salt to taste; 
1 level tspn Turmeric Pwd;
Oil 2 Tbspns; 
3 tbspns Channa Dhal, 
1 1/2 tspn Mustard Seeds; 
3 - 4 Dry Chillies; 
1/4 tspn Asafetida; 
Curry Leaves few; 
3 Tbspns washed & chopped Coriander leaves.

Method: 
Put the finely chopped green chillies, ginger, salt, turmeric pwd, lime juice in a bowl stir well & sprinkle over the cooked Rice & stir gently with fork until the grains are coated - keep aside. Take a small Kadai add the oil & let it get hot - to the hot oil add the channa dhal when it begins to get brown add the dry chillies, asafetida; mustard seeds, curry leaves, when Mustard seeds 
crackle remove & pour the seasoning over the Rice mixture. Stir again well 
with Fork. Garnish with chopped Coriander leaves, Serve with Pappads, Pickle, & Sambar.
