Ingredients:
1 kg Chicken (or Turkey also could be used);
Pepper Corns 15 g.;
Carrots-2;
Leeks-1 no.;
Celery -1 no.;
Onions 2 nos.;
Bay leaves - 4-5 nos.;
Butter 100 g.;
Refined flour or all purpose flour 100 g.;
Cream 200 ml.;
Chicken Stock/Water - 02 lts.;
Salt to taste.
Direction:
Wash the Chicken thoroughly & place in cold water
(or) cold stock. Add to it Pepper Corns, finely
chopped Celery, Carrots, Leeks & Onions. Bring to a
boil & simmer gently till the flesh from the chicken
falls apart from the bone. Strain the liquid & keep
aside. Melt Butter over very low heat & add refined
flour, cook with discoloring. Remove when the smell of
flour disappears. Add this to the liquid &
whisk nicely so that no lumps form. Bring to a boil till
the soup thickens. Remove from fire, add Cream, butter
& mix well. Check for Seasonings & serve Hot
garnished with cooked Chicken pieces, chopped
parsley & Cream.
PN:- ** For Vegetarians -Cream of Mushrooms;
Cream of Palak; Cream of Potato Soup. Etc. can be
prepared, instead of Chicken or Turkey use Mushrooms;
Palak Potato, Broccoli etc., all other ingredients
& method is the same.
