Ingredients:
6 c. thinly sliced celery
1/2 c. sliced med. onion
1/2 c. diet mayonnaise
1 tsp. salt
1/4 tsp. pepper
2 lbs. fillet of sole or flounder,
cooked, chunked, and chilled
1 1/2 c. orange sections
Direction:
Combine all ingredients except fish and orange. Mix well. Add
fish and orange, toss lightly. Serve on lettuce leaves.
Garnish with tomato wedges and radish roses if desired.
