Ingredients:
1 c. eggplant, peeled and sliced
very
thin
1/2 tsp. salt
1/2 tsp. pepper
1/4 tsp. oregano
6 oz. ground beef, broiled and
crumbled
1 med. tomato, sliced
1 tbsp. vegetable oil
1 slice enriched white bread, crumbled
Direction:
Place eggplant flat on baking sheet. Sprinkle with salt,
pepper and oregano. Bake at 350 degrees for 10 minutes,
turning once. Place half of meat in baking dish. Spread half
of eggplant on meat. Place half of tomato on eggplant. Repeat.
Sprinkle oil on top. Sprinkle bread crumbs over casserole.
Cover. Bake for 15 minutes or until heated throughout.
