Ingredients:
1 stick chilled butter (sm.
pieces)
1 1/4 c. all-purpose flour
1 1/4 c. rolled oats (NOT instant!)
1 c. brown sugar, packed
3/4 c. jam (raspberry, blackberry,
currant or apricot)
2 tbsp. brandy or liqueur
1/2 c. chopped almonds
Direction:
Preheat oven to 375 degrees.
Butter thoroughly an 8 inch square pan. In processor bowl -
combine flour, sugar, oatmeal and butter. Process until
crumbly. In small bowl - stir jam and brandy together with a
spoon - press 2/3 of PROCESSED MIXTURE in bottom of prepared
pan; spread with jam mixture. Stir almonds into remaining
oatmeal mixture and press on top of previous mix. Bake 45
minutes - cool on rack - cut in 1 inch squares.
