Ingredients:
3 lbs hamberger
1 1/2 lbs pork
sausage (I use Jimmy Dean)
4 cloves garlic minced
1 med onion chopped fine
1 stalk celery chopped fine
1 large carrot chopped fine
2 Tablespoons Butter
2 teaspoons salt1 teaspoon pepper
2 Tbl sp worcestershire sauce
1 cup pork rinds crushed fine
3 Tbl sp heavy cream
1/2 cup less 3 TBL SP water
3 large eggs scrambled 8 oz tomato sauce devided
1/3 cup dried Parsley
Direction:
In a heavy skillet cook garlic,
onion, celery and carrot in butter until tender. Stir in
worcestershire sauce, salt and pepper.Mix well and remove from
heat to cool. In a small bowel mix crushed pork rinds, heavy
cream and water. Allow to set for 5 minutes. In a large bowel
mix hamberger and sausage well. In bowel with pork rind
mixture add scrambled eggs, parsley and 4 oz tomato sauce. Mix
well. To meat mixture add cooked vegtables - mix well then add
pork rind mixture and mix really well. Meat will be very
moist. Devide meat mixture in half and mold each into a
meatloaf shape. (I have also made one portion into mini
meatloaf balls for quick snack)Add meatloaf to well greased
pan. One portion can also be frozen for next meal. Bake for 1
hour at 350 degrees then put other 4 oz of tomato sauce on
meat loaf and bake additional 45 minutes or until done. Enjoy
