Ingredients:

 

3 eggs
1 Tbsp butter or olive oil
2 Tbsp chopped onion
2 Tbsp green bell pepper
1 Tbsp red bell pepper
2 ounce cheddar cheese
2 Tbsp chopped tomato (or salsa)
1 Tablespoon bacon bits

 

Direction:

 

In a small pan, melt butter (or add olive oil), add onion and bell pepper. Cook til veggies are tender, add eggs. Scramble til eggs are partially set, add the cheese. Once done, remove from pan. Sprinkle the tomato and bacon bits over the top.
Very pretty and delicious eggs!
